A Halloween potion: it steeps blue and turns purple with a squeeze of lemon.
Pick a handful of viola petals, steep them with butterfly pea flowers, and watch the magic happen right in the glass. It’s a real showstopper!
Recipe by: Chef Krystal @oldtownpublicmarket
Ingredients
- 1 cup freshly picked viola petals
- 1 tbsp dried butterfly pea flowers
- 1 cup barely boiling water
- About 1 cup sugar (equal to the strained liquid)
- Lemon juice, to serve
Instructions
Steep the Flowers
Cover butterfly pea flowers and freshly picked viola petals with barely boiling water and let them steep, covered, for 6 to 12 hours. Strain out the spent petals.
Make the Syrup
Stir in an equal amount of sugar over very low heat until it dissolves, without letting it boil. Add lemon juice a drop at a time to shift the color from blue to purple upon serving. Refrigerate in a sealed jar for up to 2 weeks
To Serve
Drizzle it over ice cream or pancakes, stir it into custard, or use it to tint buttercream a pale purple.
