Rolled up with nutritous greens and crunchy walnuts, these treats are here to do cinnamon rolls one better.

Having a package of puff pastry in the freezer - whether you make it yourself or pick it up at the market - is like having an ace up your sleeve. It makes quick work out of tarts or savory pies, and it's there for your creative flights of fancy, like "Wouldn't it be fantastic to make a teatime or brunch treat that's flaky and buttery, but also kind of good for you and not toooth-achingly sweet?" Yes. Yes it would. A quick filling made from chopped greens, walnuts and parmesan rolls up quick. Pop them in the oven about 10 minutes after you roll out the dough, and let everyone who follows the warm and toasty scent into the kitchen marvel at your genius.

INGREDIENTS

4 c

kale (sub any mixed green for all or part), chopped

2

garlic cloves, minced

4

shallots, minced

1 c

walnuts, chopped

1/2 c

parmesan cheese, finely grated

2 Tbsp

olive oil

1 sheet

frozen puff pastry

INSTRUCTIONS
Step 1

Preheat oven to temperature indicated on puff pastry package.

Step 2

In a large skillet, heat oil over medium high heat. When shimmering, add shallot and garlic and cook until shallot softens and begins to brown. Add kale and cook until kale wilts and liquid evaporates. Add walnuts and cook a minute longer, then remove skillet from the heat and set aside to cool.

Step 3

Roll sheet of puff pastry out slightly on a floured surface until about 9x12. Spread parmesan over it, leaving a 1" border around the edges. Top pamesan with kale mixture.

Step 4

Starting from a long side, roll snugly into a long log. Slice crosswise into 2" sections and place with the edges just touching on an ungreased baking sheet.

Step 5

Bake for about 15-20 minutes until golden brown.
