INGREDIENTS

2 c

purple broccoli

3 Tbsp

dill, chopped

1 1/2 c

purple sweet potato, chopped

3 Tbsp

butter or olive oil

1

onion, julienned

garlic cloves, minced

4 c

vegetable broth

1/2

lemon, juiced

1 tsp

Italian seasoning

1 tsp

black pepper

1/2 tsp

kosher salt

INSTRUCTIONS
Step 1

Harvest the purple broccoli and dill from your Farmstand.

Step 2

In a medium-sized pot, sauté the onion and garlic in butter or olive oil until translucent.

Step 3

Add the purple sweet potato and allow the edges to brown. Just before the edges are done browning, add the purple broccoli and continue cooking.⁠

Step 4

Add the vegetable broth, Italian seasoning, black pepper, and salt, and bring to a boil.

Step 5

Once the soup reaches a hard boil, use an immersion blender to blend the soup to your desired consistency.

Step 6

Remove from heat, and mix in the chopped dill and lemon juice.

Step 7

To serve, garnish with extra virgin olive oil or heavy cream and purple broccoli florets or viola flowers from your Farmstand.⁠
