Sheet Pan Sausage, Tomatoes & Potatoes with Kale

Everyone loves a sheet pan supper - especially when it’s hearty and healthy and takes all of about 15 minutes to prep.
Two hands and one sheet pan is all you need to set you off on a path that leads straight to dinner. Smoky sausage and a pinch of paprika flavor potatoes as they cook, and ripe cherry tomatoes make it all a little saucy. When the potatoes are ready, pile on a load of chopped greens and let the residual heat from the oven finish the cooking for you. With some warm crispy bread and a little grainy mustard, your work here is done.
Yukon gold potatoes
Preheat oven to 400.
Place potatoes, sausage and tomatoes on sheet pan, drizzle with olive oil and season with salt, pepper, and paprika. Toss with your hands until everything is combined, then spread out on sheet pan in a single layer.
Place in the oven and roast for about 20 minutes, until potatoes are cooked through and beginning to get crispy.
Remove from oven, pile kale on top, using the hot pan to wilt the kale. Serve immediately with whole grain mustard.
