Get to Know Dandelion Greens
The ultimate accent for your everyday salad, dandelion greens offer an earthy nuttiness and hint of pleasantly bitter flavor. If you’ve ever broken a healthy salad habit with a boring stretch to blame, this could be the subtle change-up of your well-intentioned dreams. We also like mellowing their flavor with a quick sauté, or adding them as a punch of green in our morning smoothies.
This cold-tolerant seedling is hardy and resilient, even during chilly winter months. Because its leaves grow upright and are fairly uniform, you can expect consistency as you cut and come again. In fact, dandelion greens are easy to harvest multiple times - they’re not very prone to bolting during regrowth.
There’s a lot to love about dandelion greens, from vitamin A and vitamin K to calcium. Plus, they’re believed to reduce swelling and inflammation, making them an ideal secret ingredient for post-workout recoveries.
Get to Know Bear Necessities Kale
This mild and sweet take on kale couldn’t be prettier - and we can’t think of a more pleasant way to fit in a heaping pile of greens. Cooking for a crowd? This tender, frilly variety has lots of volume, so you can fill even the deepest of serving bowls.
With hints of green and purple, this vibrant variety is as beautiful as it is dependable - even when winter gets particularly chilly. Another bonus: This kale’s frilly form isn’t especially attractive to pests that munch. Consider it one less obstacle to your plans for green-infused grandeur.
If you have lofty goals for the new year, consider kale the ultimate go-to superfood: Even with just a cup, you’ll get jolts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese. Now that’s a mouthful!
