BOK CHOY OVERVIEW

This miniature bok choy has pale green stems and leaves that form mini heads. Its smaller size means it can be harvested quickly and replaced with another seedling. Roast, stir fry, or cut lengthwise into quarters for something new for dipping. However you eat it, you'll love its mild, slightly peppery flavor.

GROWING AND HARVESTING TIPS

Bok choy is a quick grower. Plant anywhere on your farmstand and watch out for caterpillars - they love this tasty green! As the plant matures, monitor each day for emergence of the flower stalk - this is called "bolting," and will make the plant bitter. When the leaves fill out to about 2" and the bunch is about 4" in diameter, harvest the entire plant, including the growing medium.
