Harvesting is one of the most rewarding parts of Farmstand life. You get to choose how and when, but we recommend two main techniques to make the most of every plant. Which method you use depends on the variety, your flavor preferences, and how much you need for a meal.

1. Check your Replace By Date

Look at the “Replace By” date on your Plant ID Tag or in your Lettuce Grow app for harvest timing. Growth rates vary by environment, but pruning or “cut and come again” can extend your window.


2. Cut and Come Again

This method lets you enjoy a little now while the plant keeps producing. It’s also great for improving airflow, reducing crowding, and preventing bolting (bitterness in greens and herbs).

  • Leafy greens: Snip outer leaves with clean scissors and let the center keep growing.

  • Herbs: For basil and thyme, trim the tops just above a set of leaves. For cilantro and parsley, cut stems down to the base.

  • Tip: Never remove more than one-third of the plant at a time. Fruiting crops and brassicas may take 2–4 months before they’re ready for harvest.


3. Whole Harvest

This is when you remove the entire plant—it won’t regrow. Whole harvesting ensures your plant reaches full size and maturity. Cut at the base, then swap in a new seedling when you’re ready.

4. Protect Indoor Plants

Indoors, leaves can sometimes touch LED grow lights and get burn marks. Regular harvesting and pruning help keep plants at a safe distance.
