Harvesting tips

Plant Astro anywhere on your farm and harvest greens at 3-6" for milder flavor or leave to grow larger for a more intense peppery taste. As the leaves get bigger, consider tossing with warm pasta or blending into pesto, just watch out for bolting, as this makes the leaves fibrous and astringent.

When grown indoors, Astro Arugula should be fully harvested earlier (around 3 weeks of growing) to avoid bolting.

    A perfect staple green

    I use arugula for salads, but I also use it to add a bitter component to round out the “flavor five“ when I’m creating recipes. It goes particularly well with chicken, when you introduce Parmesan cheese and lemon. Super flavor balance. It should be one of the greens that is always in your farm stand.
