Rainbow chard has lightly savoyed green leaves with beautifully colored stems in shades of red, orange, pink, purple, yellow, and white. Tender leaves grow upright in dense rosettes, with an earthy flavor and tangy notes common to these types of hardy, dark leafy greens. With a consistent growth rate and strong resistance to bolting, leaves are most tender and succulent when young but remain mild and tasty even when large.

Harvesting tips

This hardy plant can be placed anywhere on your farm, including shaded areas if harvesting for salad greens at about 2-5”. To encourage larger leaves better suited to cooking, place the seedlings near the top of your farm so the stalks and roots can grow thick. The plant must be removed before the diameter of the stalk is the same size as the diameter of the port. Large leaves will grow on the outside first and can be cut near the base up to 15-24" to be used in wilted salads, stir frys, braises, or sautees.
