INSTRUCTIONS
  1. Prepare the Vegan Fried Green Tomatoes:
    • In a shallow dish, whisk the eggs until smooth

    • In another shallow dish, mix together the flour, cornmeal, breadcrumbs, salt, pepper, and garlic powder.

    • In a separate bowl, mix the unsweetened non-dairy milk with apple cider vinegar to make vegan buttermilk.

    • Dip each tomato slice into the egg mixture, then into the buttermilk, and finally dredge in the flour mixture, ensuring it's evenly coated. Shake off any excess flour.

    • In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until hot but not smoking.

    • Carefully place the coated tomato slices in the hot oil, being careful not to overcrowd the skillet. Fry in batches if necessary.

    • Fry the tomatoes for 2-3 minutes on each side, or until golden brown and crispy. Once fried, transfer the tomatoes to a paper towel-lined plate to drain excess oil.

  2. Prepare the Spicy Aioli:
