This recipe is perfect for utilizing tomatoes that aren't quite ripe, ensuring a firm texture and tangy flavor that pairs perfectly with the crispy coating and zesty aioli. You can also fry up red tomatoes with this recipe, but make sure they are not overripe, or they will be mushy. Whichever you choose, these sandwiches promise to be a delicious and memorable meal for any occasion.

  1. Prepare the Vegan Fried Green Tomatoes:
    • In a shallow dish, whisk the eggs until smooth

    • In another shallow dish, mix together the flour, cornmeal, breadcrumbs, salt, pepper, and garlic powder.

    • In a separate bowl, mix the unsweetened non-dairy milk with apple cider vinegar to make vegan buttermilk.

    • Dip each tomato slice into the egg mixture, then into the buttermilk, and finally dredge in the flour mixture, ensuring it's evenly coated. Shake off any excess flour.

    • In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until hot but not smoking.

    • Carefully place the coated tomato slices in the hot oil, being careful not to overcrowd the skillet. Fry in batches if necessary.

    • Fry the tomatoes for 2-3 minutes on each side, or until golden brown and crispy. Once fried, transfer the tomatoes to a paper towel-lined plate to drain excess oil.

  2. Prepare the Spicy Aioli:
    • While the tomatoes are frying, prepare the spicy aioli by combining vegan mayonnaise, sriracha sauce, minced garlic, lemon juice, salt, and pepper in a small bowl. Adjust the seasoning to your taste.

  3. Cook the Vegan Bacon:
    • Cook the vegan bacon according to package instructions until crisp.

  4. Assemble the Sandwiches:
    • Spread a generous amount of spicy aioli on the bottom halves of the focaccia bread.

    • Place a layer of crispy vegan bacon on top of the aioli.

    • Arrange the fried green tomato slices on top of the vegan bacon.

    • Close the sandwiches with the top halves of the focaccia bread.

  5. Serve:
