black beans

fresh corn

INSTRUCTIONS
  1. If using fresh corn, blanch the kernels in boiling water for 2 minutes, then cool them in ice water and drain.

  2. In a large bowl, combine the black beans, fresh corn kernels, tomatoes, avocado, green bell pepper, green onions, garlic, and jalapeño pepper.

  3. In a separate bowl, prepare the dressing by combining the chopped cilantro, lime juice, olive oil, salt, and ground cumin. Whisk until well blended.

  4. Pour the dressing over the salsa ingredients and toss gently to mix.

  5. Cover and chill in the refrigerator for at least 1 hour to allow the flavors to meld. If you can make ahead and wait overnight, even better!

  6. Serve the salsa chilled with your choice of chips or as a garnish for grilled dishes.
