Beacause sometimes the salad is really what the steak dinner is all about.

A big slab of red meat sizzling on the grill is all fine and good if you're into that sort of thing, but sometimes we're really there for the salad. Hearty and filling, if this salad were a person, it would come to the table with its sleeves rolled up, ready to get down to business. Crunchy and cool with romaine and cucumbers, the rest is all juicy tomatoes, salty bacon, and creamy-funky Stilton cheese. Sweeten the deal with a baked potato and call it dinner.

INGREDIENTS

heads romaine, cute lengthwise into halves or quarters

1 c

cherry tomatoes, halved

2 c

cucumber, chopped

4

bacon slices, cooked and crumbled

1 c

buttermilk

1/4 c

Stilton cheese, crumbled

1 Tbsp

lemon juice

to taste

pepper, freshly ground

INSTRUCTIONS
Step 1

In a small bowl, stir together buttermilk, Stilton cheese, and lemon juice. Set aside.

Step 2

Place romaine on a serving platter. Scatter bacon, tomatoes, and cucumber on top and drizzle with Stilton dressing.
