Candied Mint Leaves - Lettuce Grow

Toppers in mint condition for cakes, cookies, or ice cream.

Snip a handful of your best mint leaves, give them a sugar coat, and let them set. They sparkle like frost and taste like the garden, and they turn any dessert into one that looks like it came from a bakery case.

Recipe by: Chef Krystal @oldtownpublicmarket

Ingredients

  • About 20 fresh mint leaves, rinsed and patted fully dry
  • 1 egg white
  • 1 tsp lemon juice
  • ½ cup granulated or superfine sugar

Instructions

Coat the Leaves
Whisk one egg white with a teaspoon of lemon juice until frothy, then brush a thin coat on both sides of each leaf.

Sugar and Set
Coat both sides in granulated or superfine sugar. Let them dry on parchment for at least 3 hours, or overnight, until the sugar hardens.

To Serve
Use them anywhere that needs a sweet, minty finish, or pair with flower garnishes for our Mint Mojitos.
