Cowboy Candy - Lettuce Grow

Still harvesting jalapeños? Turn them into candy with a kick!

When the plant keeps giving, give those peppers a sweet, tangy syrup bath. Cowboy candy turns a pile of jalapeños into jars of sweet heat you’ll spoon onto everything from burgers to a block of cream cheese.

Recipe by: Chef Krystal @oldtownpublicmarket

Ingredients

  • ½ lb fresh jalapeños
  • ½ cup apple cider vinegar
  • 1 to 1½ cups sugar
  • Spices of your choice, such as ¼ tsp turmeric, ¼ tsp celery seed, ¼ tsp garlic powder, and ¼ tsp paprika

Instructions

Prep the Peppers

Slice jalapeños into thin rounds, wearing gloves. Leave the seeds in for more heat.

Make the Syrup

Simmer 1 part apple cider vinegar and 2 to 3 parts sugar with your choice of spices (think: turmeric, celery seed, garlic powder, and paprika) for about 5 minutes.

Candy and Jar

Add the peppers and simmer 4 to 5 minutes, until they shrivel slightly. Spoon into clean jars with a slotted spoon. Cover with reduced syrup.
