Falafel Wraps - Lettuce Grow

Ingredients

  • 2 c cooked chickpeas
  • 1 small onion, roughly chopped
  • 3 cloves garlic, minced
  • 1/4 c parsley, chopped
  • 1/4 c cilantro, chopped
  • 2 Tbsp fresh mint, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 Tbsp all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp olive oil
  • 4 large pitas (for the wraps)
  • 1/2 c Greek yogurt (for the wraps)
  • 1/2 c muhammara (for the wraps)
  • 1/4 c red onion, thinly sliced (for the wraps)
  • 1/4 c cucumber, thinly sliced
  • 1/4 c pickled cabbage (for the wraps)
  • 1/4 c parsley, chopped (for the wraps)
  • 1/4 cilantro, chopped (for the wraps)
  • 2 Tbsp mint, chopped (for the wraps)
  • to taste salt, pepper, and sumac

Instructions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a muffin sheet pan with non-stick spray or olive oil.

Step 2

In a food processor, combine the cooked chickpeas, onion, garlic, parsley, cilantro, and mint. Pulse until the mixture is finely chopped, but not pureed.

Step 3

In a large bowl, mix the chickpea mixture with the cumin, coriander, salt, black pepper, cayenne pepper, flour, baking powder, and olive oil. Mix well until everything is combined.

Step 4

Using a cookie scoop, divide the mixture into 12 portions and shape each portion into a ball. Place each ball into the prepared muffin sheet pan.

Step 5

Bake for 25-30 minutes, or until the falafel is golden brown and crispy.

Step 6

Assemble the wraps by spreading a generous amount of muhammara on each tortilla. Top with the sliced red onion, cucumber, pickled cabbage, fresh parsley, & cilantro, mint, and a dollop of Greek yogurt. Add a pinch of salt and pepper to taste.

Step 7

Finally, add the cooked falafel balls to the wrap and roll tightly, tucking in the sides as you go.

Step 8

Serve immediately and enjoy your delicious and healthy homemade falafel wraps!
