Spearmint is the mint of Maghrebi tea - the one poured from height into small glasses, three times, each glass stronger than the last. It is also the easiest tea plant there is, and one of the few where a home grow genuinely tastes different: menthol and carvone start evaporating the moment a leaf is cut.
Beyond spearmint, this collection gathers the rest of the family that reads as cool in the cup. Lemon balm brings citrus, catnip brings a softer herbal note, and green shiso brings something closer to basil and anise.
